Marmite & Cheese Swirl

Makes: 1 x 900 g Marmite & Cheese Swirl    Bread Machine: Menu 1
Preparation Time: 15 minutes    Baking Time: 1 hour 15 minutes

Ingredients

125 ml Lukewarm water ( ½ cup )
80 ml Milk ( ⅓ cup )
1 Large egg, beaten
5 ml Salt ( 1 tsp )
5 ml Sugar ( 1 tsp )
60 g Margarine
420 g Cake flour ( 3½ cups )
7 g Anchor Instant Yeast ( 1 stick pack )
30 ml Marmite ( 2 tbsp )
125 ml Cheddar cheese, grated ( ½ cup )
Flour, to dust

Method

  1. Remove the pan from the bread machine.
  2. Make sure the paddle is in position and secure.
  3. Place the lukewarm water, milk, egg, salt, sugar and margarine into the pan.
  4. Add the flour and insert the pan into the bread machine.
  5. Make a shallow well in the flour and add the Anchor Instant Yeast.
  6. Switch the machine on and press menu 1 – Basic setting.
  7. Select 900 g/1 lb/1.5 lb size loaf and light colour settings.
  8. Check selections and press start.
  9. After mixing the machine allows for a resting period. A beeping sound indicates the start of the knocking down period. Allow to continue for
    5 minutes. Open lid and remove dough to shape. Let machine run until it stops, allowing you 15 minutes for shaping.
  10. Roll the dough into a rectangle the width of the bread pan. Spread Marmite evenly over the surface of the dough and sprinkle with cheese.
    Roll the rectangle up and place the roll into the pan, patting it over the paddle. Close lid and allow the machine to continue with cycle.
  11. When the time indicates 1h15, open the lid and carefully cut three slits over the top. Dust the top with flour. Close lid gently.
  12. When the cycle is complete, remove pan and cool for 10 minutes. Turn out onto wire rack and allow to cool.

White / Brown Bread

Makes: 1 x 900 g White / Brown Bread   Bread Machine: Menu 1
Preparation Time: 15 minutes    Baking Time: 3 hours – Basic Setting

Ingredients

300 ml Cold water ( ± 1¼ cups )
10 ml Salt ( 2 tsp )
30 ml Sugar ( 2 tbsp )
60 g Margarine ( 4 tbsp ), cut into pieces
500 g Cake flour / Brown bread flour( 4 x 250 ml / 4 cups )
7 g Anchor Bread Machine Yeast ( 1 packet )

Method

  1. Remove the pan from the bread machine.
  2. Make sure the paddle is in position and secure.
  3. Place the cold water, salt, sugar and margarine into
    the pan.
  4. Add the cake flour / brown bread flour and insert the pan into the bread machine.
  5. Make a shallow well in the flour and add the
    Anchor Bread Machine Yeast.
  6. Switch the machine on and press menu 1 – basic setting.
  7. Select 900g/1 lb/1.5lb size loaf and medium colour.
  8. Check selections and press start.
  9. When the cycle is complete, remove pan and cool for
    10 minutes. Turn out and cool.

Soda Bread

Makes: 1 x 900 g Soda Bread   Bread Machine: Menu 5
Preparation Time: 15 minutes    Baking Time: 1 hour 15 minutes – Sweet Setting

Ingredients

125 ml Lukewarm water ( ½ cup )
250 ml Buttermilk ( 1 cup )
5 ml Salt ( 1 tsp )
60 ml Sugar ( 4 tbsp )
10 ml Bicarbonate of soda ( 2 tsp )
60 g Margarine, cut into pieces ( 4 tbsp )
250 ml Coarse oatmeal ( 1 cup )
420 g Cake flour ( 3 x 250 ml + 4 tbsp / 3¼ cups )
7 g Anchor Bread Machine Yeast ( 1 packet )

Method

  1. Remove the pan from the bread machine.
  2. Make sure the paddle is in position and secure.
  3. Place the lukewarm water, buttermilk, salt, sugar, bicarbonate of soda and margarine into the pan.
  4. Add the oatmeal and the cake flour and insert the pan into the bread machine.
  5. Make a shallow well in the flour and add the
    Anchor Bread Machine Yeast.
  6. Switch the machine on and press menu 5 – sweet setting.
  7. Select 900g/1 lb/1.5lb size loaf and light colour.
  8. Check selections and press start.
  9. When the cycle is complete, remove pan and cool for
    10 minutes. Turn out.

Raisin Bread

Makes: 1 x 900 g Raisin Bread   Bread Machine: Menu 5
Preparation Time: 15 minutes    Baking Time: 1 hour 15 minutes – Sweet Setting

Ingredients

125 ml Lukewarm water ( ½ cup )
80 ml Lukewarm milk ( ⅓ cup )
1 Large egg, beaten
5 ml Salt ( 1 tsp )
60 ml Sugar ( 4 tbsp )
60 g Margarine, cut into pieces ( 4 tbsp )
420 g Cake flour ( 3 x 250 ml + 4 tbsp / 3¼ cups )
7 g Anchor Bread Machine Yeast ( 1 packet )
140 g Raisins ( 200 ml )
Milk, to brush
Sugar, to sprinkle
Sugar water glaze, to brush

Method

  1. Remove the pan from the bread machine.
  2. Make sure the paddle is in position and secure.
  3. Place the lukewarm water, milk, egg, salt, sugar and margarine into the pan.
  4. Add the cake flour and insert the pan into the
    bread machine.
  5. Make a shallow well in the flour and add the
    Anchor Bread Machine Yeast.
  6. Switch the machine on and press
    menu 5 – sweet setting.
  7. Select 900g/1 lb/1.5lb size loaf and light colour.
  8. Check selections and press start.
  9. When the cycle reaches the knocking down period the
    machine will indicate with a beep sound for extra ingredients to be added. Open the lid and add the raisins.
    Close the lid and allow the machine to continue with the cycle.
  10. When the time indicates about 1h15, open
    the lid and carefully brush the top lightly with
    milk and sprinkle with sugar. Close lid gently.
  11. When the cycle is complete, remove pan and cool for
    10 minutes. Turn out and brush with the glaze for a shiny finish.

Milk Wash

Brush with milk before baking and sprinkle with sugar.
Crust will be golden.

Sugar Water Glaze

Mix 100 g ( 250 ml ) ( 1 cup ) of sugar and 125 ml ( ½ cup )
water together in a saucepan and simmer over a low heat for about 5 minutes, stirring continuously. Cool and store in the fridge. Use when required.

Chocolate-Trio Bread

Ingredients

200 ml Lukewarm water ( ¾ cup )
1 Large egg, beaten
3 ml Salt ( ½ tsp )
45 ml Sugar ( 3 tbsp )
45 g Margarine, cut into pieces ( 1½ tbsp )
500 g Cake flour ( 4 x 250 ml / 4 cups )
7 g Anchor Bread Machine Yeast ( 1 packet )
65 g Dark baking chocolate, coarsely chopped
65 g Light baking chocolate, coarsely chopped
120 g Light nut and raisin chocolate, coarsely chopped

Method

  1. Remove the pan from the bread machine.
  2. Make sure the paddle is in position and secure.
  3. Place the lukewarm water, egg, salt, sugar and
    margarine into the pan.
  4. Add the cake flour and insert the pan into the bread machine.
  5. Make a shallow well in the flour and add the
    Anchor Bread Machine Yeast.
  6. Switch the machine on and press menu 5 – sweet setting.
  7. Select 900g/1 lb/1.5lb size loaf and light colour.
  8. Check selections and press start.
  9. When the cycle reaches the knocking down period the machine
    will indicate with a beep sound for extra ingredients to be added.
    Open the lid and add the 3 different chocolates. Close the lid and
    allow the machine to continue with the cycle.
  10. When the cycle is complete, remove pan and cool for 10 minutes.
    Turn out.

Apple & Cider Bread

250 ml Apple ( 1 cup ), coarsely grated

  2. Make sure the paddle is in position and secure.

  4. Add the cake flour and insert the pan into the bread machine.
  5. Make a shallow well in the flour and add the Anchor Bread Machine Yeast.
  6. Switch the machine on and press menu 1 – basic setting.
  7. Select 900g/1 lb/1.5lb size loaf and light colour.
  8. Check selections and press start.

    Open the lid and add the grated apple. Close the lid and allow the machine to continue with the cycle.
